Veggie Breakfast Tacos
These easy breakfast tacos are a delicious way to switch up your morning egg routine!
- 6-8 mini tortillas
- 4-6 eggs
- ¼ cup Belfonte heavy cream
- salt & pepper
- 1 head lettuce (chopped)
- 1 cucumber (chopped)
- cilantro (chopped)
- 1 cup shredded cheese
- Belfonte sour cream
In a medium sized bowl whisk your eggs and heavy cream until fluffy and season with salt and pepper to your liking.
In a saucepan over medium heat cook your eggs. I made mine scrambled.
Heat your tortillas in the pan with some olive oil.
Once you tortillas and eggs are done, you’re ready to assemble. Add your eggs, chopped lettuce and cucumbers, cilantro, and cheese to your tortillas.
Top with a dollop of Belfonte sour cream.
