Strawberry Ice Cream and Lemon Curd Sandwiches
Ingredients
- 12 thin Wafer Cookies
- 3 cups Belfonte Homestyle Strawberry Ice Cream
- 6 tbsp. Lemon Curd
- 2 tbsp. finely chopped fresh Mint
Directions
- Lay six thin wafer cookies out onto a flat surface.
- Scoop ½ cup of Belfonte Homestyle Strawberry Ice Cream onto each cookie, then gently flatten the ice cream to form a disc in the shape of the cookie.
- Drizzle one tablespoon of lemon curd over each strawberry ice cream disc, followed by a teaspoon of chopped mint.
- Carefully press another thin wafer cookie onto each disc of ice cream to create a “sandwich”.
- Serve immediately and enjoy!
