Strawberry Crumble Bars
Turn your sweet and juicy strawberries into these delicious strawberry crumble bars! These are made with a crispy, buttery crumble base, filled with juicy strawberries, and topped with more crumble.
Ingredients:
-
1 cup (220g) unsalted butter, cool
-
1/2 cup (120g) granulated sugar
-
1 teaspoon vanilla extract
-
1/2 teaspoon (2g) almond extract
-
1 large egg (50g), cold
-
2 tablespoons (30g) Belfonte milk
-
2 3/4 cups (385g) all purpose flour
-
3/4 cup (280g) strawberry jam
Directions:
Preheat your oven to 325 degrees Fahrenheit. Line an 8×8 inch pan with parchment paper and spray with cooking spray.
In the bowl of your stand mixer, combine cold butter, sugar, vanilla extract, almond extract, egg, and milk together until smooth.
Slowly add flour to the dough, mixing until batter fully combines to create a dough.
Transfer about 3/4 of the dough into your prepared pan, pushing it down with your hands
to spread and smooth it. Dough should be pressed firmly into the pan.
Spread strawberry jam over the dough.
Roll the remaining dough into varied ball sizes and place them over the jam. Make sure
to evenly disperse it over the filling. Ensure the edges of the pan have enough crumble, as
the bars will be difficult to handle without crumble around the sides.
Bake bars for 37-45 minutes or until the crumble pieces on top are light golden brown in
color.
Allow bars to cool before slicing and serving.
