Mini Waffle Butter Brickle Ice Cream Sandwiches

Ingredients

  • 20 Mini Frozen Waffles
  • 1 ¼ cups Belfonte Butter Brickle Ice Cream
  • ½ cup Milk Chocolate English Toffee Bits
  • ½ cup Mini Chocolate Chips

Directions

  1. Toast the mini waffles until crispy. Transfer the waffles to a serving plate, and allow to cool for about ten minutes at room temperature.
  2. Place toffee bits in a shallow bowl or small plate, then place the mini chocolate chips in a separate shallow bowl or small plate. Set both near the waffles.
  3. Spoon about two tablespoons of Belfonte Butter Brickle ice cream onto one mini waffle. Top the ice cream with a second waffle, creating the mini sandwich.
  4. Roll one side of the ice cream sandwich in toffee bits, so they adhere to the exposed ice cream. Roll a different side into mini chocolate chips.
  5. Repeat with remaining waffles and ice cream to make ten total mini ice cream sandwiches.
  6. Serve immediately and enjoy!

Notes:

  • We recommend using an original or cinnamon flavored mini waffle for these sandwiches.
  • If your mini waffles are larger than those pictured, feel free to add more ice cream and toppings as needed.
  • The toffee bits and mini chocolate chips are optional; these mini ice cream sandwiches are great without them, too!
