Lemon Blueberry Cookies

Lemon Blueberry Cookies

Ingredients

  • 1 cup butter 2 sticks, softened, unsalted
  • 1 cup sugar
  • 1 tablespoon of lemon zest
  • 1/3 cup brown sugar
  • 1 tbsp vanilla extract
  • 1 egg + 1 eggs yolk
  • 2 tablespoons of Belfonte Sour Cream
  • 3 tablespoons of lemon juice
  • 3 cups flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 teaspoon of baking powder
  • 1 ½ cups of blueberries

Directions

  1. Preheat oven to 350° F and line your baking sheets with parchment paper.
  2. In a large mixing bowl add your butter, 1 cup of the sugar and brown sugar & lemon zest. Mix sugar and lemon zest together and then cream together until light and fluffy.
  3. Add your vanilla extract, egg, and egg yolk, Belfonte Sour Cream and lemon juice in stir until well combined.
  4. Add your flour, cornstarch, baking soda, baking powder and salt. Stir until just combined.
  5. Add your blueberries and stir.
  6. Using a cookie scoop, scoop your cookie dough.
  7. Place on your baking sheet lined with parchment paper and bake at 350° for 8-10 minutes until cookies start to set.
  8. Remove from oven, use a round glass or cookie cutter to scoot around the edges of the cookies to make them round and thicker. Let cool.
  9. Serve, share & Enjoy!!
