Chocolate Waffles with Peppermint Stick Whipped Ice Cream

Ingredients

  • ¾ cup All-Purpose Flour
  • ¼ cup Granulated Sugar
  • ¼ cup Unsweetened Cocoa Powder
  • 1 tsp. Baking Powder
  • ¼ tsp. Baking Soda
  • ¼ tsp. Salt
  • ½ cup Belfonte Whole Milk
  • ½ tsp. Vanilla Ext
  • 1 Large Egg
  • ¼ cup Chocolate Chips
  • 2 cups Belfonte Peppermint Stick Ice Cream

Directions

  1. Preheat the waffle maker and set aside.
  2. Scoop Belfonte Peppermint Stick Ice Cream into the bowl of a standup mixer. Attach the whisk attachment to the mixer, then mix the ice cream, starting on low speed and working up to high speed, for about two minutes until fluffy. Keep cold until ready to serve.
  3. In a large mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk to evenly mix.
  4. Stir Belfonte Whole Milk, vanilla, and egg into the bowl of dry ingredients until smooth and creamy, then stir in chocolate chips.
  5. Carefully transfer waffle batter to the preheated waffle maker, then cook waffles according to the waffle maker instructions. Transfer cooked waffles to a plate to briefly cool.
  6. Top waffles with Peppermint Stick whipped ice cream and sprinkles, if desired.
