Chocolate Mint Cookie Ice Cream Sandwiches
Ingredients
- 1 cup butter 2 sticks, unsalted, browned
- 3/4 cup sugar
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp peppermint extract
- 6 peppermint leaves (finely chopped)
- 2 1/2 cups flour
- 1/3 cup cocoa powder
- 1 tbsp cornstarch
- 1 1/2 tsp baking soda
- 3/4 tsp salt
- Belfonte Vanilla Ice Cream
Directions
- Preheat your oven to 350° F and line your baking sheets with parchment paper.
- In a large bowl, add your browned butter, brown sugar, and sugar and whisk until well combined.
- Add your eggs, peppermint extract, and vanilla extract and mix until light and fluffy.
- Add your chopped peppermint leaves, flour, cocoa powder, cornstarch, baking soda and salt. Fold until just combined.
- On the flowered surface, roll out your cookie dough and cut them into circles using a round cookie color or biscuit color.
- Place your baking sheets, lined with parchment paper and bake for 8 to 10 minutes. Remove from oven and let cool.
- Once your cookies have cooled, scoop out your Belfonte vanilla ice cream and place in between two cookies.
- Continue with the rest of your cookies and ice cream until all of them are filled.
- If you’d like, you can dip them in chocolate, or add sprinkles on the edges.
